Spätburgunder brings us so much joy. The grapes grow in the Mandeler Dellchen on red sandstone,
which is the perfect site for constant ripening. In order to translate the character of and idea behind GLOW GLOW to a red wine, Pauline and Carl went for maceration carbonique (3/4) and a small portion of short skin contact (1/4) to accentuate the filigree and multi-layered character Spätburgunder from the Nahe can have. Transferring the recipe to the 2021 grapes lead to a different type of wine. It was colder
during harvest, the short skin fermentation was more of a cold maceration. The fermentation did not really begin yet. Still, Pauline and Carl wanted to press all parts at once and wow: fell in love again. Light color, full flavor!
